Sea of Green

The beautiful part of spring in New England - the sea of green that can be found.

Wide open meadows, especially during the springtime are bountiful fields of green teaming with wildlife and bird activity.

Yes, the beautiful part of spring in New England is the sea of green that can be found. Be it our own properties and gardens or just a wide open reserve, there’s an amazing amount of green all around. 

Where are you finding your green spots? Here’s one that deserves its own blog post – these volunteer mustard greens are beautiful in their own right. 
Volunteer mustard greens that seeded themselves from last season - the new nutritious green eats in the house.
Here's the best part – these leaves offer an abundance of nutrition. You can eat them as crunchy greens but sautéed, well, it takes the bitterness out. And if it's not too obvious, easy to grow. Need a reason to try them? Here's a simple yet delicious sauteed recipe sampled and tried last night. Mustard greens-it's the new green eats in the house. 

It goes without saying that the beauty of spring in New England - well, it's that lush sea of green if you just look around. Stop snoozing and get outside. See beyond the golf course and over watered lawns. The sea of green is simply astounding. It's right under your nose if you stay close to the ground.
